Description

A warm and cheesy Beef Quesadilla Bake filled with spices, perfect for gatherings and family dinners.


Ingredients

  • 1 Tbsp. extra-virgin olive oil
  • 2 bell peppers, chopped
  • 1 onion, chopped
  • 1 1/2 lb. ground beef
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1/2 tsp. smoked paprika
  • Kosher salt
  • Freshly ground black pepper
  • 8 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 green onions, thinly sliced
  • Sour cream, for garnish
  • Pico de gallo, for garnish

Instructions

  1. Preheat oven to 375 degrees.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the chopped bell peppers and onion; cook until soft, about 5 minutes.
  4. Remove the cooked vegetables from the skillet and set aside.
  5. Add the ground beef to the skillet and cook, breaking it up with a wooden spoon, until no longer pink, about 5 minutes.
  6. Drain any excess fat from the skillet.
  7. Stir in the chili powder, cumin, smoked paprika, and season with salt and pepper to taste.
  8. Arrange 6 flour tortillas around the edges of a half sheet pan, letting half of each tortilla hang over the side.
  9. Place one tortilla in the center to cover the pan completely.
  10. Spread the ground beef mixture over the tortillas, followed by the bell pepper and onion mix, shredded Cheddar cheese, and Monterey Jack cheese.
  11. Top with sliced green onions.
  12. Cover with a second baking sheet to hold everything down.
  13. Bake in the preheated oven for about 20 minutes until the tortillas start to turn crispy.
  14. Remove the top baking sheet and continue baking for another 15 minutes until the tortillas turn golden and crispy.
  15. Slice the bake into rectangles and serve warm with sour cream and pico de gallo.

Notes

You can substitute ground beef with lean ground turkey or beans for a healthier option. Consider using whole wheat tortillas and adding more vegetables.
