- 1 pound 90 percent lean ground beef
- 1 small yellow onion, finely chopped
- Kosher salt
- 1/2 cup long-grain white rice
- 4 garlic cloves, finely chopped
- 1 14.5-ounce can diced tomatoes
- 1 8-ounce can tomato sauce
- 2 tablespoons apple cider vinegar
- 1 1/2 teaspoons Worcestershire sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon granulated sugar
- Large pinch of ground cinnamon
- Freshly ground black pepper
- 5 cups coarsely chopped green cabbage (from a 9-ounce head)
- 1 tablespoon finely chopped fresh dill or parsley, plus more for serving
Instructions
- In a large, high-sided skillet over medium-high heat, heat the olive oil.
- Add ground beef and chopped onion; season with 1/2 teaspoon of salt.
- Cook, breaking up the beef with a wooden spoon until browned, about 8 minutes.
- Add the rice and garlic, stirring occasionally, until the rice is lightly toasted, about 2 minutes.
- Mix in diced tomatoes, tomato sauce, apple cider vinegar, Worcestershire sauce, smoked paprika, sugar, cinnamon, 3/4 cup of water, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Bring the mixture to a boil.
- Arrange the chopped cabbage over the rice mixture.
- Cover the skillet and reduce heat to medium-low.
- Simmer until the rice and cabbage are tender, about 22 to 25 minutes.
- Uncover the skillet, add dill, and stir to combine.
- Season with additional salt and pepper as needed.
- Top with more dill for serving.
Notes
Consider using ground turkey instead of beef for a lighter option. You can add bell peppers or carrots for extra vegetables.
