Ingredients

  • 1 pound 90 percent lean ground beef
  • 1 small yellow onion, finely chopped
  • Kosher salt
  • 1/2 cup long-grain white rice
  • 4 garlic cloves, finely chopped
  • 1 14.5-ounce can diced tomatoes
  • 1 8-ounce can tomato sauce
  • 2 tablespoons apple cider vinegar
  • 1 1/2 teaspoons Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon granulated sugar
  • Large pinch of ground cinnamon
  • Freshly ground black pepper
  • 5 cups coarsely chopped green cabbage (from a 9-ounce head)
  • 1 tablespoon finely chopped fresh dill or parsley, plus more for serving

Instructions

  1. In a large, high-sided skillet over medium-high heat, heat the olive oil.
  2. Add ground beef and chopped onion; season with 1/2 teaspoon of salt.
  3. Cook, breaking up the beef with a wooden spoon until browned, about 8 minutes.
  4. Add the rice and garlic, stirring occasionally, until the rice is lightly toasted, about 2 minutes.
  5. Mix in diced tomatoes, tomato sauce, apple cider vinegar, Worcestershire sauce, smoked paprika, sugar, cinnamon, 3/4 cup of water, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  6. Bring the mixture to a boil.
  7. Arrange the chopped cabbage over the rice mixture.
  8. Cover the skillet and reduce heat to medium-low.
  9. Simmer until the rice and cabbage are tender, about 22 to 25 minutes.
  10. Uncover the skillet, add dill, and stir to combine.
  11. Season with additional salt and pepper as needed.
  12. Top with more dill for serving.

Notes

Consider using ground turkey instead of beef for a lighter option. You can add bell peppers or carrots for extra vegetables.
