Ingredients

- 2 Tbsp. extra virgin olive oil
- 1 cup medium onion, diced
- 1 cup red and green bell pepper, diced
- Kosher salt
- Freshly ground black pepper
- 4 boneless, skinless chicken breasts
- 1 cup shredded cheddar
- 2 Tbsp. Cajun seasoning
Instructions
- Preheat the oven to 350 degrees.
- Heat the olive oil in a large ovenproof skillet over medium heat.
- Add the diced onions and bell peppers, cooking until soft, about 5 minutes.
- Season the vegetable mix with salt and pepper to taste.
- Remove the skillet from heat and let the mixture cool slightly.
- Create a pocket in each chicken breast using a sharp paring knife.
- Stuff each breast with the vegetable mixture, then top with shredded cheddar.
- Season the outside of the chicken with Cajun seasoning, salt, and pepper.
- Add the stuffed chicken breasts back to the skillet.
- Bake in the preheated oven until cooked through, about 25 minutes.
