Description

A delightful Cajun stuffed chicken recipe filled with veggies and melted cheese, perfect for family dinners.


Ingredients

  • 2 Tbsp. extra virgin olive oil
  • 1 cup medium onion, diced
  • 1 cup red and green bell pepper, diced
  • Kosher salt
  • Freshly ground black pepper
  • 4 boneless, skinless chicken breasts
  • 1 cup shredded cheddar
  • 2 Tbsp. Cajun seasoning

Instructions

  1. Preheat the oven to 350 degrees.
  2. Heat the olive oil in a large ovenproof skillet over medium heat.
  3. Add the diced onions and bell peppers, cooking until soft, about 5 minutes.
  4. Season the vegetable mix with salt and pepper to taste.
  5. Remove the skillet from heat and let the mixture cool slightly.
  6. Create a pocket in each chicken breast using a sharp paring knife.
  7. Stuff each breast with the vegetable mixture, then top with shredded cheddar.
  8. Season the outside of the chicken with Cajun seasoning, salt, and pepper.
  9. Add the stuffed chicken breasts back to the skillet.
  10. Bake in the preheated oven until cooked through, about 25 minutes.
