- 2 Tbsp. extra virgin olive oil
- 1 Tbsp. unsalted butter
- 4 medium yellow onions, thinly sliced
- Kosher salt
- Freshly ground black pepper
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. fresh thyme leaves, plus more for serving
- All-purpose flour, for surface
- 2 sheets frozen puff pastry, thawed in refrigerator
- 1 large egg, beaten to blend
- 4 oz. goat cheese, crumbled
- 2 tsp. honey
Instructions
- Heat the olive oil and butter in a large skillet over medium heat.
- Add the sliced onions, seasoning with salt and pepper.
- Cook the onions, stirring occasionally, until very caramelized, about 35 minutes.
- Stir in balsamic vinegar and thyme, then let the mixture cool to room temperature.
- Preheat the oven to 375 degrees, placing racks in the upper and lower thirds.
- Cut each puff pastry sheet into 9 (3 x 3 inch) squares on a lightly floured surface.
- Transfer the squares to 2 parchment-lined baking sheets.
- Top each square with about 1 tablespoon of the caramelized onions, leaving a 1/2 inch border on all sides.
- Brush the exposed edges with the beaten egg.
- Divide the goat cheese among the squares.
- Bake the tarts until puffed and golden brown, about 25 to 28 minutes, rotating sheets halfway through.
- Drizzle honey on each tart and top with more thyme and black pepper.
- Serve immediately or let cool to room temperature.
Notes
These bites can be customized by swapping goat cheese for feta or adding sundried tomatoes. Store leftovers in an airtight container for up to 2 days, or freeze before baking.
