A fresh and colorful Carrot Coin Salad with a delightful crunch, easy to prepare and perfect for make-ahead meals.
Ingredients

- 3 Tbsp. toasted sesame oil
- 3 Tbsp. unseasoned rice vinegar
- 1 Tbsp. fresh lime juice
- 1 Tbsp. honey
- 1 Tbsp. white miso paste
- Kosher salt
- Freshly ground black pepper
- 1 lb. orange or rainbow carrots, peeled, trimmed
- 2 Tbsp. toasted sesame seeds
Instructions
- Whisk the sesame oil, rice vinegar, lime juice, honey, and miso paste together in a large bowl.
- Season the dressing with a pinch of Kosher salt and freshly ground black pepper to taste.
- Slice the carrots into coins, about 1/8 to 1/16 inch thick, using a mandoline or sharp knife.
- Transfer the carrot coins to the bowl with the dressing and toss well to coat all the pieces.
- Move the salad into a large container with a tight-fitting lid and refrigerate for at least 3 hours or up to a week.
- Transfer the salad back to a serving bowl if desired and add additional seasoning as needed just before serving.
- Top with toasted sesame seeds for a final touch.
Notes
For a lighter option, substitute honey with agave syrup or a sugar substitute. For a vegan option, skip the honey and use maple syrup.
