Ingredients

  • 2 large boneless, skinless chicken breasts
  • 2 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups fresh spinach
  • 8 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup Parmesan cheese, optional

Instructions

  1. Preheat the oven to 400°F and lightly grease a 9×13 inch baking dish.
  2. Cut the chicken breasts in half horizontally to make four cutlets.
  3. Pound the thicker ends so all pieces are even in thickness.
  4. Whisk 1 tablespoon olive oil with minced garlic, Italian seasoning, salt, and pepper.
  5. Toss the chicken with the spice mix, cover, and chill for 15 to 30 minutes.
  6. Heat the remaining 1 tablespoon olive oil in a skillet over medium heat.
  7. Add the spinach and cook, stirring, until wilted, about 2 to 3 minutes.
  8. Beat the cream cheese in a bowl until smooth.
  9. Stir the wilted spinach, 1/2 cup mozzarella, and Parmesan into the cream cheese.
  10. Let the chicken drip off excess marinade and sear 1 to 2 minutes per side if you want color.
  11. Arrange the chicken in a single layer in the prepared baking dish.
  12. Spread the spinach and cream cheese mixture evenly over the chicken.
  13. Sprinkle the remaining mozzarella cheese over the top.
  14. Bake for 20 to 30 minutes until the chicken is cooked and the cheese is lightly browned.
  15. Let the casserole rest for 5 minutes before serving.

Notes

For a lighter dish, swap half the cream cheese for low fat cream cheese and add a splash of lemon juice for brightness.
