- 1 cup long-grain white rice
- 2 cups milk
- 1/2 cup grated Parmesan cheese
- 6 oz. cream cheese, cubed
- 2 cloves garlic, minced
- Crushed red pepper flakes, to taste
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1 rotisserie chicken, shredded (about 4 1/2 cups)
- 2 cups fresh spinach, tightly packed
- 1 (14 oz.) can artichoke hearts, drained and quartered
- 2 cups shredded mozzarella cheese, divided
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- Prepare the rice according to the package instructions.
- In a medium saucepan over medium heat, combine milk and Parmesan cheese.
- Stir until the cheese has melted.
- Add cream cheese, minced garlic, and crushed red pepper flakes.
- Season with salt and pepper.
- Cook the mixture until it thickens slightly, about 4 minutes.
- In a large bowl, stir together the cooked rice, shredded chicken, fresh spinach, artichoke hearts, and 1 cup of mozzarella.
- Pour the cream cheese mixture over the rice and stir until well combined.
- Transfer the mixture into a greased 9-inch by 13-inch baking dish.
- Top with the remaining mozzarella cheese.
- Bake in the preheated oven for about 20 minutes, or until the cheese is melty and golden.
Notes
For a healthier twist, substitute brown rice for white rice. Add diced tomatoes or sautéed veggies for extra flavor.
