Description

Indulgent Chocolate Guinness Lava Cakes with rich chocolate flavors and a gooey center, perfect for special occasions.


Ingredients

  • 1 cup heavy cream
  • 1/4 cup confectioners’ sugar
  • 1/4 cup sour cream
  • 11 oz. bottle Guinness stout
  • 6 Tbsp. unsalted butter, cut into cubes, plus more for the tin
  • 2 Tbsp. granulated sugar
  • 3/4 cup granulated sugar
  • 9 oz. semisweet chocolate, coarsely chopped
  • 3 large eggs
  • 3 large egg yolks
  • 3/4 tsp. pure vanilla extract
  • 6 Tbsp. all-purpose flour
  • 3 Tbsp. unsweetened cocoa powder
  • 3/4 tsp. kosher salt

Instructions

  1. Combine heavy cream, confectioners’ sugar, and sour cream in a large bowl. Beat with a mixer until soft peaks form. Refrigerate until ready.
  2. Bring Guinness to a simmer in a medium saucepan and cook until reduced to just over 1/3 cup, about 15 minutes. Let cool.
  3. Preheat the oven to 425 degrees and grease a muffin tin with butter. Dust it with 2 tablespoons of granulated sugar, tapping out excess sugar.
  4. Melt chocolate and butter in a microwave-safe bowl in 15-second intervals, stirring until smooth and melted, about 45 seconds.
  5. Whisk eggs, egg yolks, vanilla, and remaining sugar in a large bowl until light and frothy, about 1 to 2 minutes.
  6. Whisk together flour, cocoa powder, and salt in a medium bowl.
  7. Add the flour mixture, reduced Guinness, and melted chocolate into the egg mixture. Mix until just combined.
  8. Divide the batter among the prepared muffin cups, filling each about half full.
  9. Bake for 7 to 9 minutes, until the edges are puffed and the center jiggles slightly.
  10. Cool for 1 to 2 minutes, then loosen the edges with a knife.
  11. Invert the cakes onto a parchment-lined baking sheet and serve immediately with whipped cream on top.

Notes

These cakes are best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to three days. Warm them in the microwave before serving.
