A delightful Cinnamon Sugar Cobbler that’s simple to prepare and perfect for family gatherings, best served warm with vanilla ice cream.

- 1/2 cup unsalted butter, melted
- 2 1/2 cups all-purpose flour
- 1 cup packed light brown sugar
- 1 1/2 tsp baking powder
- 1/2 tsp kosher salt
- 1 1/4 cups whole milk
- 1 tsp pure vanilla extract
- 1 cup granulated sugar
- 2 tsp ground cinnamon
- 1 1/2 cups hot water
- Vanilla ice cream, for serving
Instructions
- Arrange a rack in the center of the oven and preheat to 350 degrees.
- Pour melted butter into the bottom of the baking dish.
- In a large bowl, whisk together the flour, brown sugar, baking powder, and salt.
- Add milk and vanilla extract, whisking until combined (a few lumps are okay).
- Gently spoon the batter over the melted butter, trying not to mix the two together.
- In a small bowl, whisk together the granulated sugar and ground cinnamon.
- Pour the sugar mixture evenly over the batter.
- Slowly pour hot water over the sugar mixture.
- Bake the cobbler until golden and puffed, about 30 to 35 minutes.
- Let cool for 10 minutes before serving with vanilla ice cream.
Notes
For a healthier twist, use whole wheat flour or reduce sugar. Leftovers can be stored in the refrigerator for 3 to 4 days.
