Description

Delicious cheesecake bars with a creamy filling and a graham cracker crust, topped with strawberry jam and drizzled with white chocolate.


Ingredients

  • 9 graham crackers, broken into small pieces
  • 5 Tbsp. unsalted butter, melted
  • 1/4 tsp. kosher salt
  • 3/4 cup granulated sugar, divided
  • 3 large eggs
  • 3 (8-oz.) pkg. cream cheese, softened
  • 1 Tbsp. all-purpose flour
  • 1 tsp. vanilla bean paste or vanilla extract
  • 1/2 cup strawberry jam (preferably Smucker’s Seedless)
  • 1/2 cup white chocolate chips or wafers

Instructions

  1. Arrange racks in upper and lower thirds of the oven; preheat to 350°F. Line a 9-inch by 9-inch baking dish with parchment, leaving a 2-inch overhang on all sides.
  2. In a food processor, pulse graham crackers, butter, salt, and 1/4 cup sugar until mixture resembles wet sand. Press into the bottom of the prepared dish in an even layer.
  3. Bake the crust until fragrant and golden, about 12 minutes. Transfer to a wire rack and let cool slightly. Keep the oven on. Wipe out the food processor bowl.
  4. In the food processor, process eggs, cream cheese, flour, vanilla, 1/2 cup sugar, and 1/2 tsp. salt, scraping down sides as needed, until smooth. Pour the cheesecake mixture into the crust and smooth the top.
  5. Transfer jam to a piping bag fitted with a round tip. Pipe four straight lines of jam across the top of the cheesecake, spaced evenly.
  6. Pour about 1 cup of water into a baking dish larger than the dish with the cheesecake. Place the water dish on the lower third rack of the oven.
  7. Bake the cheesecake on the upper rack until the edges are set and the center still slightly jiggles, about 30 to 35 minutes. Transfer to a wire rack and let cool completely, then refrigerate until firm, at least 3 hours and up to overnight.
  8. Meanwhile, in a small microwave-safe bowl, microwave the white chocolate chips in 10-second increments, stirring until melted and smooth, about 30 seconds total.
  9. Lift out the cheesecake using the parchment overhang and transfer to a cutting board. Slice into bars. Drizzle with melted chocolate and serve cold.

Notes

For best results, ensure cream cheese is fully softened and use room temperature eggs for better mixing.
