Description
Delicious cheesecake bars with a creamy filling and a graham cracker crust, topped with strawberry jam and drizzled with white chocolate.

- 9 graham crackers, broken into small pieces
- 5 Tbsp. unsalted butter, melted
- 1/4 tsp. kosher salt
- 3/4 cup granulated sugar, divided
- 3 large eggs
- 3 (8-oz.) pkg. cream cheese, softened
- 1 Tbsp. all-purpose flour
- 1 tsp. vanilla bean paste or vanilla extract
- 1/2 cup strawberry jam (preferably Smucker’s Seedless)
- 1/2 cup white chocolate chips or wafers
Instructions
- Arrange racks in upper and lower thirds of the oven; preheat to 350°F. Line a 9-inch by 9-inch baking dish with parchment, leaving a 2-inch overhang on all sides.
- In a food processor, pulse graham crackers, butter, salt, and 1/4 cup sugar until mixture resembles wet sand. Press into the bottom of the prepared dish in an even layer.
- Bake the crust until fragrant and golden, about 12 minutes. Transfer to a wire rack and let cool slightly. Keep the oven on. Wipe out the food processor bowl.
- In the food processor, process eggs, cream cheese, flour, vanilla, 1/2 cup sugar, and 1/2 tsp. salt, scraping down sides as needed, until smooth. Pour the cheesecake mixture into the crust and smooth the top.
- Transfer jam to a piping bag fitted with a round tip. Pipe four straight lines of jam across the top of the cheesecake, spaced evenly.
- Pour about 1 cup of water into a baking dish larger than the dish with the cheesecake. Place the water dish on the lower third rack of the oven.
- Bake the cheesecake on the upper rack until the edges are set and the center still slightly jiggles, about 30 to 35 minutes. Transfer to a wire rack and let cool completely, then refrigerate until firm, at least 3 hours and up to overnight.
- Meanwhile, in a small microwave-safe bowl, microwave the white chocolate chips in 10-second increments, stirring until melted and smooth, about 30 seconds total.
- Lift out the cheesecake using the parchment overhang and transfer to a cutting board. Slice into bars. Drizzle with melted chocolate and serve cold.
Notes
For best results, ensure cream cheese is fully softened and use room temperature eggs for better mixing.
