- 2 cups cottage cheese
- 1 cup fresh raspberries
- ¼ cup honey or maple syrup
- 1 teaspoon vanilla extract
- Fresh raspberries and mint leaves for garnish
Instructions
- Put cottage cheese, raspberries, honey or maple syrup, and vanilla in the blender.
- Blend until the mix is smooth and creamy.
- Spoon the mousse into four serving glasses.
- Chill the glasses in the fridge for at least 1 hour.
- Top with fresh raspberries and mint before serving.
Notes
Use ripe raspberries for the best taste. If you want a smoother mousse, strain the berries first to remove large seeds. Taste before chilling and add a touch more honey if you like it sweeter.
