Ingredients

  • 1 cup fresh raspberries
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • Fresh raspberries and mint leaves for garnish

Instructions

  1. Put cottage cheese, raspberries, honey or maple syrup, and vanilla in the blender.
  2. Blend until the mix is smooth and creamy.
  3. Spoon the mousse into four serving glasses.
  4. Chill the glasses in the fridge for at least 1 hour.
  5. Top with fresh raspberries and mint before serving.

Notes

Use ripe raspberries for the best taste. If you want a smoother mousse, strain the berries first to remove large seeds. Taste before chilling and add a touch more honey if you like it sweeter.
