Ingredients

- 1 cup fresh spinach
- 1/4 cup sliced red onion
- 1 small tomato, diced
- 1/2 cup shredded mozzarella
- 1/2 cup crumbled feta
- 4 flour tortillas
- 1 tbsp olive oil
- Black pepper to taste
Instructions
- Heat the olive oil in a skillet over medium heat.
- Sauté the sliced red onion until soft.
- Add the fresh spinach and cook until wilted.
- Stir in the diced tomato and mix gently.
- Layer shredded mozzarella and crumbled feta on a tortilla.
- Add the vegetable mixture on top of the cheese.
- Fold the tortilla over to make a half moon.
- Place the folded quesadilla in the hot skillet.
- Cook 2 to 3 minutes per side until golden and crisp.
- Remove and let rest briefly so the cheese settles.
- Slice into wedges and serve warm with black pepper to taste.
Notes
For best results, do not overfill the tortilla, and ensure the skillet is hot before cooking.
