Ingredients

  • 1 cup fresh spinach
  • 1/4 cup sliced red onion
  • 1 small tomato, diced
  • 1/2 cup shredded mozzarella
  • 1/2 cup crumbled feta
  • 4 flour tortillas
  • 1 tbsp olive oil
  • Black pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Sauté the sliced red onion until soft.
  3. Add the fresh spinach and cook until wilted.
  4. Stir in the diced tomato and mix gently.
  5. Layer shredded mozzarella and crumbled feta on a tortilla.
  6. Add the vegetable mixture on top of the cheese.
  7. Fold the tortilla over to make a half moon.
  8. Place the folded quesadilla in the hot skillet.
  9. Cook 2 to 3 minutes per side until golden and crisp.
  10. Remove and let rest briefly so the cheese settles.
  11. Slice into wedges and serve warm with black pepper to taste.
