Easy Matilda’s Chocolate Cake

Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Mix flour, cocoa, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Add eggs, milk, oil, and vanilla and beat on medium speed for two minutes.
  4. Stir in boiling water until the batter is smooth and thin.
  5. Pour batter evenly into the prepared pans.
  6. Bake for thirty to thirty-five minutes until a toothpick comes out clean.
  7. Let cakes cool in pans for ten minutes.
  8. Remove cakes from pans and cool completely on wire racks.

Notes

For a lighter version, reduce sugar or add fiber with ingredients like ground oats and mashed sweet potato. Can be made dairy-free by using almond milk and a flax egg.
