- 2 medium potatoes, diced
- 2 boneless, skinless chicken breasts, cubed
- 1/4 cup honey
- 1/4 cup BBQ sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: Chopped green onions for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Put the cubed chicken and diced potatoes in a large bowl.
- Add olive oil, honey, BBQ sauce, salt, and pepper.
- Toss until all pieces look coated and glossy.
- Spread the mix on a baking sheet in a single layer.
- Slide the sheet into the preheated oven.
- Bake for 25 to 30 minutes until chicken is done and potatoes are tender.
- Stir the pan halfway through to brown both sides.
- Remove from oven when chicken reaches safe temperature and potatoes are golden.
- Let rest a few minutes, then plate and add green onions if you like.
Notes
For a healthier twist, swap half the potatoes for sweet potatoes or use skin-on chicken thighs for added moisture. This dish can also be meal prepped and stored in the fridge for up to four days.
