Description

A warm and comforting dish featuring cubed chicken and diced potatoes coated in a sweet honey BBQ sauce, perfect for family dinners.


Ingredients

  • 2 medium potatoes, diced
  • 2 boneless, skinless chicken breasts, cubed
  • 1/4 cup honey
  • 1/4 cup BBQ sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: Chopped green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Put the cubed chicken and diced potatoes in a large bowl.
  3. Add olive oil, honey, BBQ sauce, salt, and pepper.
  4. Toss until all pieces look coated and glossy.
  5. Spread the mix on a baking sheet in a single layer.
  6. Slide the sheet into the preheated oven.
  7. Bake for 25 to 30 minutes until chicken is done and potatoes are tender.
  8. Stir the pan halfway through to brown both sides.
  9. Remove from oven when chicken reaches safe temperature and potatoes are golden.
  10. Let rest a few minutes, then plate and add green onions if you like.

Notes

For a healthier twist, swap half the potatoes for sweet potatoes or use skin-on chicken thighs for added moisture. This dish can also be meal prepped and stored in the fridge for up to four days.
