- 2 chicken breasts
- 8 oz pasta (penne or fettuccine)
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup parmesan cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Cook the pasta according to the package directions and drain it.
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken with salt, pepper, and Italian seasoning.
- Add the chicken to the skillet and cook until golden and done.
- Remove the chicken and set it aside while you make the sauce.
- Add the garlic to the same skillet and cook for about 30 seconds.
- Pour in the chicken broth and heavy cream and bring the mix to a simmer.
- Stir in the parmesan until it melts and the sauce gets thicker.
- Slice the chicken and put it back in the skillet.
- Add the cooked pasta and toss to coat with the sauce.
- Garnish with fresh parsley and serve hot.
Notes
For a lighter version, try using half-and-half or a mix of milk and cream. You can also use whole grain pasta for added fiber.
