Description

Decadent cupcakes with a gooey center filled with fresh raspberries and chocolate chips, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh raspberries
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, melt butter and mix in sugar, eggs, and vanilla.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Gently fold in raspberries and chocolate chips.
  6. Pour the batter into the prepared cupcake liners, filling each about 3/4 full.
  7. Bake for 18-20 minutes, or until the edges are set but the center is still soft.
  8. Let cool for a few minutes before enjoying.

Notes

For a lighter version, consider substituting half the butter with applesauce. Store leftovers in an airtight container for up to two days or freeze for up to three months.
