Delicious soft cookies filled with bright mulberry jam, perfect for a snack or gift.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup powdered sugar
  • 2 sticks salted butter, melted
  • 2 tablespoons vanilla
  • Mulberries
  • Sugar
  • Lemon juice
  • A few lemon seeds

Instructions

  1. Add flour, baking powder, and powdered sugar to a large bowl and stir to combine.
  2. Cut butter into small pieces and place in a small bowl to melt.
  3. Add melted butter and vanilla to the dry mix and stir until smooth.
  4. Cover the dough and chill in the fridge for 30 minutes.
  5. Wash and drain your mulberries and weigh them.
  6. Put mulberries in a food processor and pulse for about one minute.
  7. Transfer the mashed mulberries to a pot.
  8. Add half the weight of the mulberries in sugar to the pot.
  9. Heat the pot on medium high until the mix comes to a boil.
  10. Let the mix boil for five minutes while stirring.
  11. Lower the heat to medium low and cook until the juice reduces by about half.
  12. Add the juice of one half lemon and a few lemon seeds.
  13. Continue to cook until the jam thickens and coats a spoon.
  14. Preheat the oven to 350 degrees F and line a baking sheet with parchment.
  15. Scoop a tablespoon of dough and roll it into a ball.
  16. Place the ball on the sheet and push your thumb into the center to make a nest.
  17. Space the cookies so they do not touch each other.
  18. Add about one teaspoon of mulberry jam to the center of each cookie.
  19. Make sure not to overfill the centers with jam.
  20. Bake the cookies in the preheated oven for 12 to 15 minutes.
  21. Remove the baking sheet and let the cookies rest for a few minutes.
  22. Transfer the cookies to a rack and cool them all the way.
