Ingredients

- 3 cups shredded mozzarella, divided
- 2 (8-oz.) blocks cream cheese, softened
- 1 cup ricotta
- 1/3 cup plus 2 tbsp. freshly grated Parmesan, divided
- 1 Tbsp. Italian seasoning
- 1/2 tsp. crushed red pepper flakes
- Kosher salt, to taste
- 3/4 cup pizza sauce
- 1 cup mini pepperoni
- 2 (16-oz.) cans refrigerated biscuits
- 1/4 cup extra-virgin olive oil
- 3 cloves garlic, minced
- 1 Tbsp. freshly chopped parsley
Instructions
- Preheat the oven to 350 degrees.
- Mix together 2 cups mozzarella, cream cheese, ricotta, 1/3 cup Parmesan, Italian seasoning, and crushed red pepper flakes in a large bowl.
- Season the mixture with Kosher salt to taste.
- Transfer the cheese mixture to a 9-x-13-inch baking dish and spread it evenly.
- Spread the pizza sauce on top of the cheese mixture.
- Top with the remaining 1 cup mozzarella and mini pepperoni.
- Halve the biscuits and roll each piece into small balls.
- Place the biscuit balls on top of the dip mixture.
- Whisk together extra-virgin olive oil, minced garlic, and chopped parsley in a small bowl.
- Brush this mixture over the biscuit balls.
- Sprinkle the remaining 2 tbsp. of Parmesan on top.
- Bake for about 45 minutes until the biscuits are golden and the cheese is melty.
- Cover the baking dish with aluminum foil and bake for an additional 15 to 20 minutes until the biscuits are cooked through.
- Let the dish cool for about 10 minutes before serving.
Notes
To lighten up this dip, consider using reduced-fat cream cheese or Greek yogurt instead of ricotta, and turkey pepperoni for less fat.
