Shredded Beef Sandwiches

Description

Tender shredded beef piled high on soft rolls, this dish captures the warmth and comfort of family gatherings.


Ingredients

  • 3/4 cup extra-virgin olive oil
  • 3 lb. boneless beef chuck roast
  • 5 tsp. kosher salt
  • 2 1/2 tsp. fresh ground black pepper
  • 1 large yellow onion, sliced
  • 3 cloves garlic, sliced
  • 1 Tbsp. Worcestershire sauce
  • 2 tsp. dried basil
  • 1 tsp. dried oregano
  • 1 tsp. dried thyme
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/4 tsp. crushed red pepper flakes
  • 5 cups low-sodium beef stock
  • 1 green bell pepper, cut into 1 inch strips
  • 2 cups chopped giardiniera
  • 4 French sub rolls, toasted

Instructions

  1. Preheat your oven to 325 degrees.
  2. Heat 3 tablespoons of olive oil in a large Dutch oven over high heat.
  3. Season the beef with 4 teaspoons of salt and 2 teaspoons of black pepper.
  4. Brown the beef on both sides for about 5 minutes per side.
  5. Remove the beef and set it aside on a plate.
  6. Add sliced onions and garlic to the pot, then season with a pinch more of salt and cook for 5 minutes.
  7. Add Worcestershire sauce, dried basil, oregano, thyme, garlic powder, onion powder, and crushed red pepper flakes.
  8. Stir until the liquid evaporates.
  9. Pour in 1/2 cup of beef stock to deglaze the pot, scraping up any brown bits.
  10. Return the beef to the pot and pour in the remaining beef stock.
  11. Bring everything to a boil.
  12. Reduce heat to medium-low, cover, and bake for about 2 hours, flipping the beef after the first hour.
  13. Uncover the pot and continue baking for another 30 minutes until the meat shreds easily.
  14. Shred the beef with two forks and return it to the pot.
  15. Toss bell pepper with 1 tablespoon of olive oil, season with salt, and roast on a baking sheet for about 20 minutes.
  16. Mix chopped giardiniera with the remaining olive oil.
  17. Fill each toasted roll with the shredded beef, top with roasted peppers and giardiniera, and spoon cooking liquid over the top.

Notes

For a lighter version, consider using leaner cuts of beef and adding more vegetables. Pair with a side salad or homemade potato chips.
