Shrimp Scampi Flatbread

Description

A delicious fusion of shrimp scampi flavors served on crispy flatbread, perfect for gatherings.


Ingredients

  • 2 1/2 Tbsp. extra-virgin olive oil, divided
  • 2 Tbsp. butter
  • 3 cloves garlic, minced
  • Pinch crushed red pepper flakes, plus more for garnish
  • 1 1/2 lb. large shrimp, peeled and deveined
  • Kosher salt
  • Freshly ground black pepper
  • Juice and zest of 1 lemon
  • 1 large store-bought flatbread
  • 2 cups shredded mozzarella
  • Chopped fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400 degrees.
  2. In a large skillet over medium-high heat, add 2 tablespoons of olive oil and the butter.
  3. Once the butter has melted, add the minced garlic and cook until fragrant, about 1 minute.
  4. Add the crushed red pepper flakes and continue to cook for another minute.
  5. Toss in the shrimp and season with a pinch of kosher salt and freshly ground black pepper.
  6. Sear the shrimp for 2 minutes on each side until they are pink and opaque.
  7. Deglaze the pan by adding lemon juice and cooking until most of the liquid has evaporated. Then, remove the skillet from heat.
  8. Place the flatbread on a baking sheet and brush it with the remaining 1/2 tablespoon of olive oil.
  9. Sprinkle 1 1/2 cups of mozzarella over the flatbread.
  10. Layer the cooked shrimp mixture on top of the cheese.
  11. Add the rest of the mozzarella on top of everything.
  12. Bake in the oven for 12 to 15 minutes until the cheese is melty and the flatbread is golden brown.
  13. After baking, garnish your flatbread with extra red pepper flakes, chopped parsley, and lemon zest.

Notes

For a lighter version, use less cheese or whole-grain flatbread and add more veggies.
