Description
A delicious fusion of shrimp scampi flavors served on crispy flatbread, perfect for gatherings.
Ingredients

- 2 1/2 Tbsp. extra-virgin olive oil, divided
- 2 Tbsp. butter
- 3 cloves garlic, minced
- Pinch crushed red pepper flakes, plus more for garnish
- 1 1/2 lb. large shrimp, peeled and deveined
- Kosher salt
- Freshly ground black pepper
- Juice and zest of 1 lemon
- 1 large store-bought flatbread
- 2 cups shredded mozzarella
- Chopped fresh parsley, for garnish
Instructions
- Preheat your oven to 400 degrees.
- In a large skillet over medium-high heat, add 2 tablespoons of olive oil and the butter.
- Once the butter has melted, add the minced garlic and cook until fragrant, about 1 minute.
- Add the crushed red pepper flakes and continue to cook for another minute.
- Toss in the shrimp and season with a pinch of kosher salt and freshly ground black pepper.
- Sear the shrimp for 2 minutes on each side until they are pink and opaque.
- Deglaze the pan by adding lemon juice and cooking until most of the liquid has evaporated. Then, remove the skillet from heat.
- Place the flatbread on a baking sheet and brush it with the remaining 1/2 tablespoon of olive oil.
- Sprinkle 1 1/2 cups of mozzarella over the flatbread.
- Layer the cooked shrimp mixture on top of the cheese.
- Add the rest of the mozzarella on top of everything.
- Bake in the oven for 12 to 15 minutes until the cheese is melty and the flatbread is golden brown.
- After baking, garnish your flatbread with extra red pepper flakes, chopped parsley, and lemon zest.
Notes
For a lighter version, use less cheese or whole-grain flatbread and add more veggies.
