Ingredients

- 2 lbs boneless, skinless chicken thighs
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cans (15 oz each) hominy, drained and rinsed
- 4 cups chicken broth
- 1 can (15 oz) diced tomatoes with green chilies
- 2 tsp ground cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Chopped cilantro for garnish
- Lime wedges for serving
Instructions
- Place the chicken thighs in the slow cooker.
- Add the chopped onion, minced garlic, hominy, chicken broth, diced tomatoes, cumin, chili powder, salt, and pepper.
- Stir to combine all ingredients.
- Cook on low for 360 minutes or high for 240 minutes.
- Shred the chicken with two forks once it is cooked.
- Stir the shredded chicken back into the soup.
- Serve hot with chopped cilantro and lime wedges.
Notes
You can use low sodium chicken broth for less salt. Add extra vegetables for more fiber and keep it light.
