Description

A comforting and flavorful slow cooker chicken posole perfect for cold nights, made easy with minimal fuss.


Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cans (15 oz each) hominy, drained and rinsed
  • 4 cups chicken broth
  • 1 can (15 oz) diced tomatoes with green chilies
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Place the chicken thighs in the slow cooker.
  2. Add the chopped onion, minced garlic, hominy, chicken broth, diced tomatoes, cumin, chili powder, salt, and pepper.
  3. Stir to combine all ingredients.
  4. Cook on low for 360 minutes or high for 240 minutes.
  5. Shred the chicken with two forks once it is cooked.
  6. Stir the shredded chicken back into the soup.
  7. Serve hot with chopped cilantro and lime wedges.

Notes

You can use low sodium chicken broth for less salt. Add extra vegetables for more fiber and keep it light.
