Slow-Cooker Tuscan Chicken Meatballs with Gnocchi

Ingredients

  • 1 lb. ground chicken or turkey
  • 1 cup panko breadcrumbs
  • 1 large egg
  • 1 tsp. Italian seasoning
  • 1 tsp. kosher salt
  • 1/2 tsp. freshly ground black pepper
  • 1/2 tsp. garlic powder
  • 1 cup drained oil-packed sun-dried tomatoes
  • 1 1/2 oz. Parmesan, finely grated (about 3/4 cup), divided, plus more for serving
  • 1/2 small yellow onion
  • 4 garlic cloves
  • 1 cup low-sodium chicken broth
  • 1/2 cup dry white wine
  • 1 pkg. gnocchi
  • 3 cups packed baby spinach leaves
  • 1/2 cup heavy cream

Instructions

  1. Combine chicken, panko, egg, Italian seasoning, salt, pepper, garlic powder, 1/2 cup sun-dried tomatoes, and 1/2 cup Parmesan in a medium bowl.
  2. Form the mixture into 18 meatballs, each about 1 inch in diameter.
  3. Add the chopped onion, minced garlic, chicken broth, white wine, and tomato oil to the slow cooker. Season with salt.
  4. Nestle the meatballs into the slow cooker mixture.
  5. Cover and cook on High for about 240 minutes until the meatballs are fully cooked.
  6. Preheat your oven’s broiler and arrange a rack in the upper third.
  7. Using a slotted spoon, transfer the meatballs to a foil-lined baking sheet.
  8. Add the gnocchi and the remaining 1/2 cup sun-dried tomatoes to the slow cooker and mix well.
  9. Cover and cook on High for about 20 minutes, until the gnocchi is tender.
  10. While the gnocchi cooks, broil the meatballs for about 6 to 8 minutes, turning halfway until golden brown.
  11. Stir the spinach, cream, and 1/4 cup Parmesan into the slow cooker.
  12. Return the meatballs to the slow cooker and cover, cooking for about another 5 minutes until the spinach wilts.
  13. Divide the gnocchi and meatballs among bowls, and top with extra Parmesan.

Notes

For a healthier option, use ground turkey and replace heavy cream with Greek yogurt.
