- 1 lb. ground chicken or turkey
- 1 cup panko breadcrumbs
- 1 large egg
- 1 tsp. Italian seasoning
- 1 tsp. kosher salt
- 1/2 tsp. freshly ground black pepper
- 1/2 tsp. garlic powder
- 1 cup drained oil-packed sun-dried tomatoes
- 1 1/2 oz. Parmesan, finely grated (about 3/4 cup), divided, plus more for serving
- 1/2 small yellow onion
- 4 garlic cloves
- 1 cup low-sodium chicken broth
- 1/2 cup dry white wine
- 1 pkg. gnocchi
- 3 cups packed baby spinach leaves
- 1/2 cup heavy cream
Instructions
- Combine chicken, panko, egg, Italian seasoning, salt, pepper, garlic powder, 1/2 cup sun-dried tomatoes, and 1/2 cup Parmesan in a medium bowl.
- Form the mixture into 18 meatballs, each about 1 inch in diameter.
- Add the chopped onion, minced garlic, chicken broth, white wine, and tomato oil to the slow cooker. Season with salt.
- Nestle the meatballs into the slow cooker mixture.
- Cover and cook on High for about 240 minutes until the meatballs are fully cooked.
- Preheat your oven’s broiler and arrange a rack in the upper third.
- Using a slotted spoon, transfer the meatballs to a foil-lined baking sheet.
- Add the gnocchi and the remaining 1/2 cup sun-dried tomatoes to the slow cooker and mix well.
- Cover and cook on High for about 20 minutes, until the gnocchi is tender.
- While the gnocchi cooks, broil the meatballs for about 6 to 8 minutes, turning halfway until golden brown.
- Stir the spinach, cream, and 1/4 cup Parmesan into the slow cooker.
- Return the meatballs to the slow cooker and cover, cooking for about another 5 minutes until the spinach wilts.
- Divide the gnocchi and meatballs among bowls, and top with extra Parmesan.
Notes
For a healthier option, use ground turkey and replace heavy cream with Greek yogurt.
