Description

A simple, warm, and filling Spanish Tortilla that’s perfect for brunch.


Ingredients

  • 4 large potatoes, peeled and thinly sliced
  • 1 large onion, thinly sliced
  • 6 large eggs
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Heat olive oil in a large frying pan over medium heat.
  2. Add the sliced potatoes and onions, cooking until the potatoes are tender and the onions are translucent.
  3. In a large bowl, beat the eggs and season with salt and pepper.
  4. Drain the potatoes and onions from the oil and add them to the beaten eggs, mixing well.
  5. Return the mixture to the frying pan and cook on low heat until the bottom is set.
  6. Carefully flip the tortilla to cook the other side until golden brown.
  7. Remove from the pan and let it cool slightly before serving.

Notes

Store in the fridge for up to four days. Reheat gently or enjoy cold. Use less oil for a lighter version, and feel free to add greens.
