A simple, warm, and filling Spanish Tortilla that’s perfect for brunch.
Ingredients

- 4 large potatoes, peeled and thinly sliced
- 1 large onion, thinly sliced
- 6 large eggs
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Heat olive oil in a large frying pan over medium heat.
- Add the sliced potatoes and onions, cooking until the potatoes are tender and the onions are translucent.
- In a large bowl, beat the eggs and season with salt and pepper.
- Drain the potatoes and onions from the oil and add them to the beaten eggs, mixing well.
- Return the mixture to the frying pan and cook on low heat until the bottom is set.
- Carefully flip the tortilla to cook the other side until golden brown.
- Remove from the pan and let it cool slightly before serving.
Notes
Store in the fridge for up to four days. Reheat gently or enjoy cold. Use less oil for a lighter version, and feel free to add greens.
