Spinach & Artichoke Chicken

Description

A comforting dish combining tender chicken with a creamy spinach and artichoke sauce.


Ingredients

  • 2 Tbsp. extra-virgin olive oil
  • 6 chicken breasts
  • Kosher salt
  • Freshly ground black pepper
  • 1/2 tsp. dried oregano
  • 3 Tbsp. butter
  • 3 cloves garlic, minced
  • 2 cups baby spinach
  • 1 (13.75-oz.) can artichoke hearts, chopped
  • 1/2 cup sliced roasted red peppers
  • 1 cup half-and-half
  • 3/4 cup shredded mozzarella
  • 1/4 cup Parmesan

Instructions

  1. Season chicken all over with salt, pepper, and oregano.
  2. In a large skillet over medium-high heat, heat olive oil.
  3. Add chicken and cook until golden, about 6 minutes per side.
  4. Remove chicken from skillet and set aside.
  5. Melt butter in skillet and stir in garlic; cook until fragrant, about 30 seconds.
  6. Stir in baby spinach, artichokes, and red peppers; cook until spinach starts to wilt.
  7. Add half-and-half and bring mixture to a simmer.
  8. Stir in mozzarella and Parmesan, season with salt and pepper.
  9. Return chicken to skillet and cook until sauce thickens slightly and chicken is fully cooked, about 5 minutes more.
  10. Remove from heat and serve warm with sauce.
