  • 1 cup whole milk
  • 6 Tbsp. unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 Tbsp. pure vanilla extract
  • 1 (1/4-oz.) package instant yeast

  • 5 1/4 cups all-purpose flour, divided, plus more for dusting

  • 1 lb. frozen strawberries, thawed and coarsely chopped
  • 1/3 cup granulated sugar
  • 2 Tbsp. cornstarch
  • 2 tsp. ground cinnamon
  • 1 tsp. finely grated orange zest
  • 1/4 tsp. kosher salt
  • 1 large egg (for egg wash)
  • 1 cup freeze-dried strawberries
  • 4 oz. cream cheese, softened
  • 3/4 cup confectioners’ sugar, sifted
  • 2 Tbsp. whole milk
  • 1/4 tsp. kosher salt
  • Fresh strawberries, for serving (optional)

Instructions

  1. Whisk together eggs, milk, melted butter, granulated sugar, and vanilla in a large bowl.
  2. Add yeast, salt, and 2 cups flour, stirring until just combined.
  3. Use a dough hook to add remaining flour and mix until a ball forms (about 5 minutes).
  4. Knead dough on a floured surface for 1-2 minutes, then place in a greased bowl, cover, and let rise for 1-2 hours until doubled.
  5. Cook strawberries with sugar, cornstarch, cinnamon, zest, and salt until thickened, about 15 minutes, then cool.
  6. Roll out dough, spread filling, and shape into a log.
  7. Cut into 12 pieces, place in a greased baking pan, cover, and refrigerate overnight.
  8. Let rolls rise until doubled the next day, about 1 hour. Preheat oven to 350°F.
  9. Brush rolls with egg wash and bake for 30-35 minutes until golden. Cool for 20 minutes.
  10. Beat cream cheese, sugar, and some freeze-dried strawberries until smooth. Add milk and salt, mixing until fluffy.
  11. Spread frosting over cooled rolls and garnish with remaining strawberries as desired.

Notes

For healthier options, consider using almond milk, coconut oil, or whole wheat flour.
