Ingredients

  • 8 oz rotini pasta
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions.
  2. Drain and let the pasta cool.
  3. Combine the black beans, corn, red bell pepper, cherry tomatoes, red onion, and cilantro in a large bowl.
  4. Whisk the olive oil, lime juice, cumin, salt, and pepper in a small bowl.
  5. Add the cooled pasta to the vegetable mixture.
  6. Pour the dressing over the pasta and vegetables.
  7. Toss everything until the salad is evenly coated.
  8. Chill the salad in the refrigerator for at least 30 minutes before serving.
